Potluck meals aren't for everyone, but to me they're a fun throwback that bring people together through food and a shared community.

Having said that...potluck get togethers can be super stressful when you are gluten free. Even more stressful is when it's a potluck at school or preschool with your gluten free kids in tow. I'll be honest and say I skipped a couple. I felt overwhelmed with very young children (aged 2, 3, or 4) that needed to be gluten free and were also picky eaters. Not fun, not easy, I'll pass.
When we did go to potlucks at school in the classroom, it was still a ton of work and not the point of a potluck at all! I made gf meals for each child so that they could still participate, but my food for them had nothing to do with the theme of the potluck (Thanksgiving, Christmas, Mothers Day, etc.)
After several years, I just got over it. The kids were happy, we were all together, they were eating. It's fine.
This week my son's first grade class had a potluck to celebrate their study of South American culture, music and dance. It was terrific. I brought something that matched the theme, that I knew we could both eat. I also packed him a full lunch and ate ahead, just in case.
Not only was there a lot to eat that was gluten free, my son is now old enough to spot what he can have and what he can't. We both had lots of beans, rice, meat, salsas, chebe bread, fruit and drinks. The parents were incredible and the entire day was fun. Potluck success.
